Is there anyway to get a different seat depth on each end of a K series joist other than creating a special custom family?

Have u tried assigning an instance parameter in the family for the seat height?

Right, you should be able to control each joist seat independently. I haven't looked at the family for a while, but I image this is possible. Just modify the existing family.
