How can I change the linetype within a hatch pattern? I need to show that a ceiling grid is to be demo'd so the whole grid needs to be a hidden line, not just the perimeter.

Demolished items can be controlled through your phase settings. Settings/ phases / grapic over-rides.

Yeah, I did that but only the perimeter of the acoustical ceiling becomes hidden. The who grid is still solid and looks exactly like a new grid or another one that is existing to remain.

I see that I haven't run across this before. Unless you find an appropriate hatch, your only solution may be to use a screen on the ceiling.
