You can assign them individually to each when you create the form, just like you can when you build an independent family. Read this topic in your HELP Applying Materials to Elements

You assign the material properties when you build the element. Extrusion / sweep / revolve ....properties. Not after the family is built.

"Hub- that could be- but that's hard to believe..how would you know what the final render material will be for an in-place family element?" - WYS, you render the object, if you don't like pick in the object go to the properties and you have a parameter "Material", Change that for the material you want, also, go to Settings>Materials and you can change that there....

it's a bunch of tricky stuff you have to do in the family types dialog- i been through this before but i forget everything.. i tried dealing with it but i couldn't.. and you know everybody would rather play cat and mouse than write out the steps.. yeah.. 1. click on the in-place family you want to change materials for. 2. ? 3. ? 4. ? 5. ? 6. ? thank you so much..

WWHubs method. Go into edit mode of the family. Assign materials to the individual components. If they are likely to change create a material specifically for that item, such as 'Gadget 2 finish' in the materials editor and assign that material to the component. Close the family. Alternatively, as Typhoon suggested, edit the family and give the material a parameter, such as Gadget finish, close the family and then there will be a material parameter in the family properties,

What is not obvious to the beginner user (like me before I figured this out) is that you can only change the properties of an inplace family is in the individual extrusions, sweeps, etc. If you think about it, a family can have more than one extrusion and you may want to apply a different material to the different elements of the family, thus you must apply properties to each element of the family. Sooooo. You would select the family > edit in place > select the element (extrusion, sweep, etc.) > edit properties - the dialog box appears and you can select/edit the materials. If you're using 2010 the ribbon shows the edit and property icons in different locations from context tab to the next...and that's a gripe for another thread.
