I know this might be a simple question, but how do you turn off the model door in the floor plan so that only the 2d swing is showing?

You will need to modify your door family and give the door panel a visibility parameter. Then change the model door swing lines to be visible in 3D.

I'll try that. but if I open up a predefined door, where is the parameter for it? I don't see it. I see the Visibility graphics, and I go to door but all the layers are on.

Click on the door and the edit family button. Probably save it as a new family. Click on the door panel properties and you check wether it is visible or not. You can switch this off, or add a parameter to switch it on and off by clicking the small button on the right of the field row. The door swing is a symbolic line so will only show in the plan. Redraw over it with a model line (If there are two, one is for course and the other for fine). Click on Load into project.
