How could I adjust a viewport so only a part of my plan appears on my sheet? Sort of like in Autocad where you can adjust the boundary of a viewport to show, for example, just one room on the sheet. Any ideas?

Of course you can do it.
Turn on 'show crop region', you will get boundary, select it and move spots in the middle of it
It's easy ...
