When creating beam systems Revit always defaults the beams created as joists. Is there a way so that it will default the created beams to girders instead?

If, for instance, you always want a particular type of beam to show as a girder (like all of your wide-flange steel beams) I'd edit the family by adding a symbolic line of the type "Stick Symbols (Projection)". Also, change the parameter "Symbolic Representation" to "From Project Settings" under the Category and Parameters menu. In the beam family change the object style for structural framing to the line type and weight you want and it will always show up that way in your drawings. You have to do this in every beam family that you want to force to the girder line style. Hope that helps.
