if i make my own wall with create and check the wall catagory- how do i get it to have wall properties like a system made wall? its element properties have almost nothing in it.. and if i go to edit the family for my wall- what is in there to do with a wall structure?

You can't because it is not a system wall, you can oly assign it to the wall catagory. Only what you build into it will be available.
