why when i highlight a family component and click on edit family and go to materials and change the render color it changes fine in the family but loaded back in the project nothing changes either for shaded view or render?

Check the definition of that material in your project under Settings, Materials.

that was it- just needed to use the same material name back in the project.. here is the bigger problem i'm having: when i load the K-series-bar joist-web 30 K 12 component- some of its parts are just lines.. but in the family editor all its parts are solid.. do you know how i can make them all solid in the project?

It may be due to your detail level. The solid geometry might only display when it's set to fine.
