Surely there is a simple explanation to this that I am not aware of:

When placing walls one can enter numerical values for the distance, but how about the angle?

I know I can control the angular increments in the snap settings, but that only gets you so far...

How would I best go about achieving specific odd degrees?

After you can place the wall, hightlight it and change the angle.

Yes, revit is more playful then AutoCAD.  Place first and then massage as needed to the appropriate shape.  Its designed to be quicker on the fly for when designing and then to come back later to set the final angles/lengths etc.

As qthdad suggested.  Select the wall afterwards to change its angle or add a dimension and change the value of the dimension if you want to change it around a specific pivot point.  Once you have 1 wall at the desired angle then any subsequent walls/lines can snap to the angle of this.
