Does anyone have, or know how to create a parameter that lists a sheet # of #? Like, "sheet 1 of 15" and so on.

Unfortunately there is no default parameter that will achieve this effect. however using a shared parameter you could set up a manually updated parameter to host the "of" value of sheets. To do this you will need to use a shared parameter in the Titleblock Family. Please post your experience and confortability level within the Revit Family Editor. I will post further details depending on your experience level.
