Trying to insert a running dimension string from a site datum to set out the kerb line of an internal road in a sub-division. Any ideas?

not possible in one dimension string.
Use multiple dimension strings. IE: from origin to element, then start the next. Then just drag the dimension value to the appropriate position.
Unfortunately this is the only method currently.
HTH.
