in general my stairs, toilets, tubs, washer/dryers, etc are defaulted to grey color and a lineweight. if I override the line weight, color and pattern thru "view properties", "element props" and "vis/graphics" override will I have to go into each view and change the default. If so is there a way to change these project wide?

Change them in the object styles, under Settings.
