My question is, when you create a 3d object then review the object in elevation you have Elevation markers. These markers you can revise by assigning different heights and names. The question is, instead of having a numerical value for a height (say 20'-6" could you have it read "varies" ? Thanks.

No, every "Elevation markers" represent that (elevation), so, in one elevation marker you don't have "Varies" elevations...

arch04, the only way you can do that is turning off that elevation marker and creating an annotation family similar to an elevation marker to "simulate" the level symbol adding the text "varies" that you want.
