GOOD NEWS: I just modified my level marker family. Copied the elevation label so that I had two labels pointing to the same parameter - then I modified the units of one of them. Now I have a level marker with feet and inches and metric - all in the same marker. Didn't know I could do that.

OH! Ok, I finally found it. If other people are having this problem - In the label editing dialogue select the label and then clock on the icon below with the # symbol. That's the icon for the label units settings. Piece of cake.
