Hi. I need to dimension a run of stairs by labeling with the number of treads (i.e. (11) T @ 11" = 10' 1" instead of the numeric value of the distance measured. Revit won't seem to let me delete (override) the given value of the dimension in order to enter an alternative text entry. I know I can add text to the dimension line by adding a prefix and/or suffix to the automatically generated value, but can I remove the 'value' of the distance entirely and enter other text?

Not possible and don't believe and prefer it never was... This would open the door for laziness and possible errors.
Why couldn't you dimension the whole flight from first tread to last to get the overall distance 10' 1". Then add a prefix to this (11) T @ 11" =...
This should give you what you require?
