Well, the matierials that show up in the drop down box do not determine the surface patterns that show up.  Instead the materials have a fill pattern associated with them which can be changed by you.  The closest you're goign to get to seeing what the patterns looks like is by going to Setting > Fill patterns.  Note there are Model and Draft patterns, either of which can be associated with the materials available in the drop down box for the paint tool.  You can see which surface pattern is associated with which material by goign to Settings > Materials and looking through the materials in that list.
