I'm trying to create demo tags that would work with a schedule. When I try to create the annotation, the Family editor will not let me choose Shared Parameters. What am I doing wrong?

What template are you using...
Depending on what elements you are demolishing, i'd use the multi-category tag so i can tag doors, walls, windows that are demolished all with the same tag.
Then select shared parameters, either browse or create a new shared parameter file. Then create a new group and start adding your shared parameters....
