for the structural plan i would like to show the floor plan with a lighter lineweight and show the structural elements darker, for the electrical plan i would like to show the electrical symbols darker and the floor plan lighter, ect... Is there a way in Revit to do this without changing the model, like maybe just set a special view for printing??

Select the Items you want to change and Right click and select Override in View-->By Element. You will get the override box and you can change the lineweights of the Items. This only affects the items for that view.

You cal also go into VG for any view and halftone all of the architectural elements.
