Is there a way to create a table in revit that is somewhat similar to an Excel spreadsheet? I do not need to reference anything into the table...just need to create a table and fill it in with text and maybe some gray color fill to highlight a category.

There isn't really an automatic way of doing this in revit.
I'd suggset drawing the table with lines and text using the legend tool...
