in the view itself select the crop region and you can split it into segments, you won't be able to change the plane though, if you want to step the view, use a section. you cannoy curve the elevation (why??)

I have a long curved hallway I need an elevation of and having only a straight cut plane it will cut threw the wall on the opposite side of the hall. It would be hard to turn off everything I don't want to see but that might be the only way to do it.
