I created a structural C-channel column and managed to give it an assigned height. But when I assign the levels that it is suppose to extend to it doesn't change height to meet that level/height. Also, when I attach it to my roof it doesn't extend to meet the roof. What do I need to do?

Sounds like you need a parameter that allows adjustment. In an elevation view of the family, draw a dimension from top to bottom. Assign a 'height' parameter, so that it can be adjusted as necessary. You can make it adjustable per type or per instance. I think you want per instance in this case.
