I've set up my broswer with various viewtype groupings (type=View Type with Folders set to Group by Family and Type then Views).

Everytime I reopen the central, the brower's viewtype settings is reset to it's default (type=all) resetting the folder ordering back.

Is there a way to lock the view type properties?

I believe that has to be set in the central file.  In other words, create a new central from a file that has the browser set like you like.

Why are re-opening the central?  I know that some people recommed that but we have an office of 20+ users and we almost always just use our local files and re-load latest at the beginning of the day.  Making a new local every day is overkill and really bogs down the network if you have large projects.

Oh no, this is how we work as well...

It's just everytime you we started working in the file it would be reset. I will try what you suggested and will update afterwards.
