any way to adjust how dark or lite my dim text shows up

Because text in REVIT is not pen based but is TTF, text "intensity" is a function of font and Bold settings only.

Select a dimension and click "Element Properties". Under its "Type" properties (Type Parameters), scroll down to the "Text" category. Here you can change the font, the font size, the font style (ie - bold). Also, in the same dialogue box, under the "Graphics" category, you can change the "Color" of the dimension and text...to a dark gray for example (which will read lighter than your black drawing lines)....

I think I understand what jcedens is saying, and that WILL work, but there is also another way to do this as well.

 

Simply select your text and other elements you want to appear lighter (or grey in this case), right click on one of the selections, and choose 'Override Graphics in View'.  From here you have an option to select 'Halftone' or 'Transparent'.  Picking 'Halftone' will make your text and/or elements appear grey for that view.  Here is an example of line-type styles I have created for our site-plans.  Our subgrades use different text and linestyles, but in CAD we always made the color to be a thinner pin-weight.  While you can do that to with revit, I simply found it easier for existing utility lines to make them 'Halftone'.
